Authentic Moroccan Baghrir

Baghrir, also known as Moroccan pancakes or “thousand-hole pancakes,” is a traditional dish with a spongy texture and a delightful honeycomb-like appearance. Here’s a simple recipe:


Ingredients (serves 4-6)

  • 2 cups semolina (fine)
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp sugar
  • 2 1/4 tsp active dry yeast (1 packet)
  • 2 1/2 cups warm water (adjust as needed)

For Serving

  • Honey
  • Butter

Instructions

  1. Prepare the Batter
    • In a blender or mixing bowl, combine semolina, flour, yeast, baking powder, sugar, and salt.
    • Gradually add warm water while blending or mixing until the batter is smooth and slightly runny.
    • Let the batter rest for 30 minutes to 1 hour, covered, in a warm place to activate the yeast.
  2. Cook the Baghrir
    • Heat a non-stick pan over medium heat (no need for oil).
    • Pour a small ladleful of batter onto the pan.
    • Cook until the surface is covered with bubbles and the top is set (do not flip).
    • Remove the baghrir and place it on a clean towel to cool. Repeat with the remaining batter.
  3. Serve
    • Mix melted butter and honey together. Drizzle generously over the baghrir or serve on the side.
