Ingredients
- 250g (2 cups) almond flour or finely ground blanched almonds
- 125g (1 cup) powdered sugar
- 2 large eggs (separate yolks and whites)
- 1 tsp orange blossom water (optional, for flavor)
- 1 tsp baking powder
- Zest of 1 lemon (optional)
- Powdered sugar (for rolling the cookies before baking)
Instructions
- Prepare the Dough
- In a mixing bowl, combine the almond flour, powdered sugar, and baking powder.
- Add the egg yolks, orange blossom water, and lemon zest (if using). Mix well to form a sticky dough.
- Beat the Egg Whites
- In a separate bowl, beat the egg whites until they form soft peaks. Gently fold them into the almond mixture to achieve a smooth, pliable dough.
- Shape the Cookies
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Scoop small portions of the dough (about a tablespoon each) and roll them into balls.
- Roll each ball in powdered sugar to coat generously.
