Classic Meskouta: A Simple Moroccan Sponge Cake Recipe
Traditional Meskouta Recipe

Meskouta is a traditional Moroccan sponge cake, known for its simplicity and delightful taste. It’s often enjoyed with tea or coffee. Here’s a straightforward recipe for you:
Ingredients
- 3 large eggs
- 1 cup granulated sugar (200g)
- 1 cup vegetable oil (240ml)
- 1 cup milk (240ml) or orange juice for a citrusy flavor
- 2 cups all-purpose flour (240g)
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- Zest of 1 orange or lemon (optional, for added flavor)
- A pinch of salt
Instructions
- Preheat Oven:
Preheat your oven to 180°C (350°F). Grease and flour a round cake pan or line it with parchment paper. - Mix Wet Ingredients:
In a large bowl, beat the eggs and sugar together until the mixture becomes pale and fluffy. Add the oil, milk (or orange juice), and vanilla extract. Mix well. - Add Dry Ingredients:
In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this to the wet mixture, stirring gently to avoid lumps. If using zest, fold it in at this stage. - Pour into Pan:
Pour the batter into the prepared cake pan, smoothing the top with a spatula. - Bake:
Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean. - Cool and Serve:
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Dust with powdered sugar or serve plain.
Tips for the Perfect Meskouta:
- Replace a portion of the flour with almond or semolina flour for a different texture.
- Add a handful of raisins or nuts for extra flavor.
- Serve with a drizzle of honey or a side of jam for a special touch.
Enjoy your homemade Meskouta! 😊
