Ingredients
For the Couscous:
- 2 cups couscous
- 2 ½ cups boiling water or vegetable broth

- 1 tsp paprika

Instructions
- Prepare the Couscous:
- Place couscous in a large bowl.
- Add olive oil or butter and a pinch of salt, then pour the boiling water or vegetable broth over it.
- Cover the bowl tightly with a lid or cling film and let it sit for about 5 minutes.
- Fluff the couscous with a fork and set aside.
- Cook the Vegetable Stew:
- Heat olive oil in a large pot over medium heat.
